Ingredients:
Cream:
- - 300g thickened cream
- - 2 Tbsp icing sugar
- - BioPure Collagen Protein (see label for recommended dose)
- - Optional: 1-2 tsp Vanilla extract (adjust to taste)
Base:
- - Mini meringues (These can be store bought if you’re low on time, or you can find a recipe here)
Toppings:
- - Seasonal fruit (Strawberries, blueberries, raspberries and kiwifruit are great options)
- - Optional: Mint leaves & icing sugar
Method:
- 1. Add the thickened cream and icing sugar in a bowl (You can add vanilla extract for a sweeter cream). Use an electric mixer to whisk the cream until firm peaks form.
- 2. Fold in the recommended dose of BioPure Collagen Protein (found on the back of pack) using a spoon and mix until combined.
